Summer is in full swing, I find myself spending more hours outdoors soaking in all the divine rays coming my way. Living in Portland, where gray and rainy are a perpetual winter/spring canvas, I dream of the blue skies and sunshine that come during the summer months. It’s already mid-July and the heat always results in me avoiding cooking or eating anything more involved than simply enhancing the fresh taste of the local produce. I’ve found a few good recipes that I like to cook on such hot summer nights while dining alfresco.

1. Watermelon Mint Feta salad

~Dice watermelon according to how many you’re planning on feeding. Place on a platter or plate, sprinkle the chunks with a handful of feta cheese crumbles and top with torn mint leaves. Finally, drizzle with balsamic vinegar and let sit in the juices for 10-15 minutes in the fridge before serving.

2. Tuscan cantaloup wrapped in Prosciutto.

~Seed the cantaloup and slice into 2 inch width half moons, wrap one slice of prosciutto around each piece.

 

3. Summer green smoothie is adapted from this recipe at Ambitious Kitchen.

~1 cup frozen mango chunks

~1 kiwi sliced with skin removed

~1/4 ripe avocado

~2 cups kale

~1/2 cup unsweetened almond mil

~1/2 cup ice or adjust per desire consistency

In a blender combine all ingredients and blend on high until smooth and creamy. Depending on how thick you like, adjust the ice quotient. Super tasty and very healthy.

 

4. Figs with goat cheese and a virgin mojito.

~Wash and slice a handful of figs, accompany with your favorite goat cheese, I especially love this flower goat cheese crafted from Salt Springs Island, British Columbia. Simply place a dollop of the soft cheese atop the each fig half and pop in your mouth for a burst of creamy sweet. Wash this down with mineral water with a squeeze of lime and a few mint leaves.
